Terroir: The ultimate natural champagne challenge, this cuvee comes from old vines in Avize and was produced without any external additives. Hand bottled under cork. Disgorged 2 months before the release date without dosage. This cuvee is only available in bottle.

Vinified in hogshead (240L) barrels. A blend of the “têtes de cuvées” from a single harvest. The selection includes the best vines from Agrapart’s Avize vineyards (Les Champboutons) and Cramant (les Bionnes). The expression of the Avize and Cramant terroir is sought in this wine, where the chalky soil brings finesse and minerality. The vines are 40 years-old. The alcohol level is natural and the first fermentation is done using indigenous yeast. Secondary fermentation is also done using indigenous yeast from the current harvest. Indigenous yeast is used to start the first and second fermentation, but no exogenous sugar was required. Malolactic fermentation is complete. The bottling is made without any filtration on September of the following year. Aged on lies for 3 years and riddled by hand. The disgorgement date is 2 months before marketing.
