Terroir: The vineyard is located in Buxieres-sur-Arce with 19 years old vines standing on calcerous clay standing on Bands of Kimmeridgian soil common to Chablis. Certified organic and biodynamic farming since 1998.

Composition: The wines are made from Pinot Noir and Chardonnay both in big oak barrel (foudre of 40hL each) from 2005-06-07 and 08, parcel of Biaune. This wine has never known chemistry, neither in the vineyard nor in the cellar. This experience will be revealed by tasting the 2 bottles together. You will discover the whole truth of the Kimmeridgian / Pinot Noir and the Kimmeridgien / Chardonnay couples. Tasting mainly intended for informed amateurs who still doubt the delicacy of the Chardonnays matured in the Côte des Bars.

Indigenous yeast vinified and matured in Foudre barrel with MLF but not every year.
From Bertrand Gautherot: I like to say that these two bottles clearly show us that the massive planting of Pinots Noirs in the Côte des Bar prices allowed us to make broad champagnes, robust in the mouth but in opposition to the saline memory of the rather tense wine. (cf: when we have been practicing biodynamics for 20 years)
On the other hand, by tasting the 2 bottles, we see that the Chardonnays in exactly the same natural conditions, are on the nose and in the mouth already on the limestone tension of the Chablisian rocks of our soils. In my opinion, the style is more in the spirit of early 21st century wines.
