Terroir: Always a vintage champagne, this cuvee comes from two selected vineyard blocks (Bionnes in CRAMANT and Champbouton in AVIZE) with the same geological profile. A thin layer of soil barely covering the chalk. Precise, savory, and saline, Minéral offers us the chalky dimension of the terroir.

VINIFICATION

Vinified by separate parcels in oak demi-muids. Selection and blending of head of the cuvée from the best Avize single vineyard (Les Champboutons) and Cramant (les Bionnes). The champagne maker is looking for the terroir expression, Avize and Cramant, very chalky soil which brings finesse and minerality. The vineyard is 40 years-old. Malolactic fermentation is complete. Bottling without filtration in May 2010. Aged on lie for 5 ans et riddled by hand. The dosage is 5 g by litre.
