Terroir: Always a vintage champagne, this cuvee comes from a single vineyard of 60 ares in AVIZE (Fosse aux pourceaux). No heavy mechanical machines were used in the maintenance of this vineyard, which has solemnly been worked by man and by horse. Vénus is the domain’s single vineyard emblem.

VINIFICATION
Vinified by separate parcels in oak demi-muids. (8 to 10 barrels per year) Single vineyard of 30 ares (la Fosse) which is ploughed by horse (Venus) and never experience any machine. Planted in 1959, this single vineyard revealed another aspect of the Avize terroir. Complete malolactic fermentation. Bottling without filtration was done on May 2008, directly using cork and staples. Aged on lie for 4 years using manual whisking. Disgorgement was done 60 days before the wines were marketed. Dosage 0 g / litre : Brut Nature SO 2 50 mg / litre.
