VINIFICATION

Wine process : Enamelled tanks with thermo-regulation for
Fermentation temperature-control – 6.000 L oak
barrels for reserve wines. No malolactic fermentation
Bottled : May 1996 with cork
This champagne was released 12 years after the harvest 1995. It is a blend of two grapes varieties : 80 % Pinot Noir, 20 % Chardonnay, that has been ageing on lies with a cork. With a light dosage, it’s perfect for an aperitiv.
