Press: Traditional press of Champagne <Coquard> with a capacity of 4 000 kilos.

Bottle size: 75 cl, 150 cl

 

VINIFICATION

Pinot Noir: 57% in enamelled tanks with thermo regulation for fermentation temperature control.

43% in 200L oak barrels.

Chardonnay: in enamelled tanks with thermo regulation for fermentation temperature control.

Malolactic fermentation: yes

Bottled: February 2004, with cork

Potential alcohol degree: 12.40

Residual sugar: 4.8 g/L

Total acidity H2SO4: 5.05 g/L

Free acidity: 0.36 g/L

Total SO2: 52 mg/L

Free SO2: 6 mg/L

pH: 3.05
